Mistledoe's Ridiculously Rich Almond Fudge Brownies
Preheat oven to 350 degrees. Grease an 8x8 glass or metal pan and set aside.Mix:
1/3 C brown sugar
1/3 C white sugar
1/2 C butter melted
1 Tbs vanilla
3 eggs
Add:
1/2 C almond flour
1/4 C brown rice flour
1/4 C white rice flour
1/4 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1/2 C Ghirardelli unsweetened cocoa powder
1/2 C chocolate chips
Optional:
Add 1/3 C chopped walnuts
Top with powdered sugar
Drizzle with hot fudge
Eat entire pan
Bake at 350 degrees for 25 minutes. Serve warm with vanilla ice cream. Sleep peacefully.
Note: Almond Flours
I used blanched bulk almond flour from Winco which I found was more finely ground and not as gritty as Trader Joe's almond meal and Bob's Red Mill almond meal, so the brownies have a really nice fudgy texture when combined with the even more finely ground rice flours.
